Sesame Tofu & Vegetable Noodle Salad

I’ve been creating some hearty salad recipes as of late & excited to be sharing more with you here. I don’t eat tofu very often, however love using it occasionally in beautiful salads like this. The majority of soy is genetically modified so be sure to opt for organic when purchasing tofu. Tempeh is also great in this salad. Either or will work (:

For the Salad:

• 2 small zucchini’s spiralized

• 2 small carrots spiralized

• Handful of mint

• Handful of coriander

• Handful of sprouts

• Handful of pistachios

• 1-2 cups of greens

• 1 block of organic tofu, chopped into cubes Toss ingredients together with a squeeze of lemon & salt + pepper. Baked tofu & pistachios are best ontop. Drizzle dressing ontop.


Marinade for the tofu:

• 1 tbsp sesame oil

• 1 tbsp tamari

• 1 tbsp honey

• 1 tbsp ginger

Mix all ingredients together & dress the tofu. I love to marinade it overnight, however not necessary if you are pressed for time. Bake tofu in the oven at 180 degrees for 20 mins or until crispy 😋 Spread tofu over top of salad when ready to serve.

Dressing:

• 1 tbsp sesame oil

• 1 tbsp tamari

• 2 tbsp tahini

• Juice of half a lemon

• 1 tbsp water

• Minced ginger 1 tsp

Mix all ingredients together until smooth & drizzle over salad when ready to serve.
