Raw Chocolate

I’m a huge advocate for cacao. I’ve talked about this before, and I’ll talk about it again & again. Cacao is the most incredible superfood and has so many wonderful medicinal & nutritional qualities.

Most of us all love chocolate! But many of the brands on the market today are full of processed sugar, additives and chemical laden crap. This is such a shame as cacao (what chocolate is created from) in its natural state, is such a powerful form of medicine.

However, I have created a much healthier version here for you. This recipe is 100% raw and refined sugar free. It is still rather on the rich side so be sure to pace yourself (:

This recipe is quick and easy. It does not require tempering so therefore will eventually melt at room temp.

Equipment • Blender

Ingredients

• 1 cup of melted coconut oil or cacao butter – I personally use coconut oil purely for the fact it is more affordable than cacao butter! Both turn out delicious

• 1 cup raw cacao powder

• 1/3 – 1/2 cup of natural sweetener – my preference is maple

• Pinch of salt

Optional

• 1-2 drops of a food grade essential oil for flavor. I love using peppermint, orange or rose.

Instructions

Mix all ingredients together until smooth with a whisk. Don’t overdo it as the coconut oil has the potential to split! Mix all ingredients together with a whisk until smooth.

You can mix through anything you like! I love using desiccated coconut, crushed nuts and seeds or even dried fruit. Get creative!

Once all ingredients have been mixed through, pour mixture into chocolate molds or a lined tray. Place in freezer to set. This will only take around 30 minutes!

For the keto folks:

This recipe can easily be made keto! Just substitute the maple for stevia. The quantity will vary depending on taste. I personally would use around 10-15 drops of liquid stevia in this recipe. However more if you like it sweeter.

Medicinal purposes of Cacao

• Cacao is an incredible mood booster. It contains anandamide (aka the bliss molecule which is known to create feelings of euphoria) and phenylethylamine. Both are mood enhancing.

• Cacao is rich in polyphenols, naturally occurring antioxidants. These guys are known to reduce inflammation, increase blood flow, lower blood pressure & improve cholesterol.

• Cacao is an amazing source of magnesium. This mineral is essential for energy production, a healthy brain, a healthy nervous system and strong teeth + bones.

• Cacao contains theobromine, a natural energy booster that combats fatigue.

• Cacao is also a great source of iron which builds blood supply and transports oxygen around the body.

• Cacao contains potassium, copper, zinc, manganese and selenium.
