Raw Key Lime Pie

For the Crust

• 2 cups almonds or sunflower seeds
• 2 cups soft dates
• ½ cup desiccated coconut
• 1 tbsp coconut oil

Blend the nuts or seeds in a processor first. Add the coconut and then gradually add the dates. Add the coconut oil last and blend all together until fully mixed. Press into a lined pie tin and freeze.

For the Filling

• 2 ripe avocados
• 2 cups soaked cashews
• 1 cup of lemon or lime juice
• ½ cup maple syrup
• 1 cup nut milk (I prefer coconut)
• ½ cup melted coconut oil
• handful of fresh mint
• pinch of spiralina or barley grass powder for colour
• 1 tsp vanilla
• pinch salt

Blend everything together until smooth. Pour on top of crust and freeze for 6-8 hours before serving.

Decorate with anything your heart desires!
